Chef Francesco Paldera was born in Bari in southern Italy in 1968. He has worked and taught in the United States, Germany, Finland, and Italy in renowned hotels and restaurants and for the culinary institute of New York.
Since 1993 he has been with the chain Hotel Mercure Villa Romanazzi in Bari. He is active in slow food Puglia, has worked for the “I.C.E.” Italian Institute for Foreign Trade and is an ambassandor of Apulian cuisine in the world.
He published “Menu di Puglia (The taste of Apulia)” a gastronomic guide that has become a literary work of rare quality. with 30 creative recipes dedicated to his region, Puglia.
