An early advocate of a vegetarian diet, Enrico Alliata, the Duke of Salaparuta, published The Duke’s Table, an extensive collection of vegetarian recipes (1,030 to be exact), in 1930. Italian publishing house Sellerio continues to publish the cookbook and now an English edition will soon be available from Melville House.
Described as a utopian gourmand and winemaker, the bon vivant believed that vegetarianism was the secret to a long and healthy life as well as “a solution to human happiness.” Who doesn’t want a taste of that?
